Dairy Free and Nut Free Chocolate Sugar Cookies

I have two kiddos with allergies. One has a peanut, tree-nut, sesame, coconut allergy. And the other is severely allergic to dairy.

I tried out a recipe today using two new-to-me products for cookies that they could both eat. They came together super fast and tasted great so I had to share!

Chocolate Sugar Cookie {DF, NF, PF}

The cookie {this is the recipe from BHG cookbook, but with a few changes}

2/3 cup vegan butter spread, softened

3/4 cup sugar

1 tsp baking powder

1/4 tsp salt

1 egg

1 tsp vanilla

1 3/4 cups flour

Beat the butter spread until smooth. Add sugar, baking powder, salt. Beat until all combined. Beat in egg and vanilla, incorporate those and then add the flour a little at a time. Divide the dough in half, wrap in plastic and refrigerate until is is cold and holds together, about 30 minutes.

Gently roll the dough out to 1/4 inch. Gently because the vegan spread doesn't hold together quite as well as butter, but easy does it and it will work out just fine.

Cut out cookies with a cookie cutter. Bake for about 6 minutes in a 350* oven. Don't over do it. I like to remove the cookies before I see any light brown edges. I like soft cookies.

 

In the meantime, get yourself a small pot of water boiling and then reduce to a simmer. Place a glass or metal bowl on top of the pot (Don't let the bottom of the pot touch the water). You just created for yourself a double boiler! Place 1 cup Enjoy Life chocolate chips in the bowl and wait patiently for about 4-6 minutes until they melt, stirring occasionally. 

When the cookies come out of the oven let them cool for a few minutes, until they won't fall apart when you hold them. Spoon 2 tsp of the melted chocolate in the middle of one cookie and the sandwich it with another. Return it to the cooling rack.

Try not to touch these until the chocolate has cooled and re-solidified. {Is that a word?}

I put mine in the fridge. It's the only place they are safe.
